Heat oil in medium skillet on medium heat. Add vegetables; cook 5 min. or until softened, stirring frequently. Remove from heat; stir in ketchup.
Mix remaining ingredients just until blended. Add half the ketchup mixture; mix lightly.
Press into 9x5-inch loaf pan sprayed with cooking spray.
Bake 1 hour or until done (160ºF). Let stand 5 min. Meanwhile, cook remaining ketchup mixture in saucepan on medium heat until heated through, stirring frequently.
Slice meatloaf. Serve topped with ketchup mixture.

Serve with roasted potatoes and steamed fresh green beans.
