    thin rice noodles, uncooked

  • 1/2

    cup

    HEINZ Thai-Inspired Sweet Chili sauce

  • 1/2

    cup

    reduced-sodium vegetable broth

  • 1/2

    cup

    dry roasted peanuts, chopped, divided

  • 2

    tbsp

    creamy peanut butter

  • 1

    tbsp

    oil

  • 3/4

    cup

    matchlike carrot sticks

  • 3

    eggs, beaten

  • 4

    4 green onions, sliced

  • 1

    cup

    fresh bean sprouts


Instructions

  1. Step 1

    COOK noodles in pan of boiling water 3 to 4 min. or just until tender; drain.

  2. Step 2

    MEANWHILE, combine Sweet Chili sauce, vegetable broth, 1/4 cup nuts, and peanut butter.

  3. Step 3

    HEAT oil in large nonstick skillet on medium heat. Add carrots; cook and stir 2 min. Spoon carrots to one side of skillet. Add eggs to other side of skillet; cook 2 min. or until set, stirring occasionally.

  4. Step 4

    ADD onions, bean sprouts, sauce mixture and noodles; mix lightly. Cook 3 to 4 min. or until heated through, stirring frequently. Sprinkle with remaining nuts.

    Serving Suggestion:

    Serve topped with chopped fresh cilantro and your favorite hot sauce. Add some lime wedges on the side.
