Score steak on both sides with shallow cross-cuts; place in shallow dish. Mix Worcestershire sauce, soy sauce and 1 Tbsp. (3 tsp.) oil until blended. Pour over steak; turn to evenly coat both sides of steak with Worcestershire sauce mixture. Refrigerate 1 hour.
Heat remaining oil in large skillet on medium heat. Add onions; cook and stir 8 min. Cover; cook on medium-low heat 15 min. or until golden brown, stirring occasionally. Remove from heat.
Heat grill to medium heat. Grill steak 6 to 8 min. on each side or until done. Remove steak from grill; cover. Let stand 5 min.
Cut steak across the grain into thin slices; place on bottom halves of rolls. Top with onions and arugula.
Spread mayonnaise onto cut sides of tops of buns; place over sandwiches.
For a spicy kick, mix mayonnaise with 3 Tbsp. prepared horseradish and 1/2 tsp. freshly cracked black pepper before using as directed.
