A grind of pepper
2
Cloves of garlic
2
X 225,g packs halloumi, cut into chips
-
Olive oil, for frying

Instructions
Step 1
In a bowl, mix the flour and celery salt with a good grind of pepper, then toss in the halloumi to give the fries a light coating.
Step 2
Add the oil to a wide, deep, heavy-based pan, so that it fills to a depth of about 1 cm. Flatten the garlic with the back of a knife and add to the oil, gently heat for 5 minutes then remove the garlic. Turn up the heat a little and add a few pieces of halloumi at a time, frying for 1-2 minutes and turning regularly with tongs, until they are golden and crispy all over. Transfer to a piece of kitchen paper and repeat.
Step 3
Sprinkle the fries with the chopped coriander and serve with Heinz Tomato Ketchup dip.
