Step 1
Preheat the oven to 400F.
Step 2
Press the pickles between two sheets of paper towels to absorb excess moisture.
Step 3
Prepare an 18" x 13" baking sheet with parchment paper. Sprinkle half of the cheese across the baking sheet in a thin, even layer.
Step 4
Place the pickles on top of cheese in rows, spacing them about 2" apart. Cover with remaining cheese in an even layer.
Step 5
Bake for 15-20 mins, or until cheese is golden brown and crispy. Allow to cool for 10 mins.
Step 6
Remove from the sheet tray in one large piece and transfer to a cutting board. Cut chips into individual squares so each chip contains one pickle. Serve with aioli on the side as a dip.
