Caramelised onion beanzy pie


Ingredients

    Olive oil

    Brown onion, thinly sliced

  • 2

    Celery stalks, chopped

  • 2

    Medium carrots, chopped

  • 2

    Medium zucchinis, chopped

  • 2

    Gloves garlic, crushed

  • 2

    tsp

    Freshly chopped thyme or rosemary

  • 2

    425g tins lentils, drained

  • 2

    300g tins Heinz Beanz caramelised onion flavour

  • -

    Salt flakes & cracked black pepper, to taste

    Mashed potatoes

  • 1/2

    Fresh breadcrumbs

  • 1/2

    cup

    Grated cheddar cheese


Instructions

  1. Step 1

    Preheat oven to 180°C/ 160°C fan-forced.

  2. Step 2

    Heat half the oil in a large frying pan. Cook the onion over medium heat for 5 minutes, until lightly caramelised. Add the celery, carrot, zucchini, garlic and half the chopped herbs. Cover and cook for a further 5 minutes.

  3. Step 3

    Meanwhile, combine the breadcrumbs, grated cheese, remaining oil and herbs in a bowl. Season with salt and pepper to taste.

  4. Step 4

    Add the lentils, Heinz Beanz Caramelised Onion Flavour and a tin of water to the pan. Stir until evenly combined, then turn off the heat.

  5. Step 5

    Spoon the bean mixture to a 2L capacity baking dish. Spread the mashed potato on top and sprinkle with the breadcrumb mixture. Bake uncovered for 20-25 minutes, until the golden brown on top.
