Luxury Prawn Cocktail

Ingredients

300 g

cooked king prawns

100 g

Heinz Saucy Sauce

6 

radishes

1 

fennel bulb

1 

lemon - half wedges, half for squeezing

lettuce leaves

pinch of paprika

Instructions

Step 1

Trim and cut the fennel bulb in half, keeping any fronds for later, and shave either with a mandolin or with a vegetable peeler. 

Step 2

Place into a bowl and squeeze over some lemon juice and sprinkle with a little salt. Toss together to coat the fennel with the lemon. 

Step 3

Slice the radishes thinly then slice again into matchsticks. Toss the prawns with the Saucy Sauce.

Step 4

Arrange 4 lettuce leaves in bowls or glasses. Top each with a quarter of the fennel, a quarter of the radish and a quarter of the prawns. 

Step 5

Sprinkle each with a little paprika and grind over black pepper, then add any fennel fronds and lemon wedges before serving.
