Ingredients

1 tin

Heinz Beanz or Heinz No Added Sugar Beanz

140 g

Tin sweetcorn, drained

3 

Spring onions, finely sliced

1 tsp

Cayenne pepper

2 medium

Eggs, beaten

85 g

Gram flour

1 tsp

Baking powder

2 tbsp

Vegetable oil

Instructions

Step 1

Combine the sweetcorn, Heinz Beanz, spring onions and cayenne pepper in a bowl. Add the beaten eggs and mix well.

Step 2

Sieve over the gram flour and baking powder and fold though until fully combined.

Step 3

Heat the oil in a large nonstick frying pan and using a dessert spoon scoop out two spoonful’s for each fritter into the pan. Fry for 2 minutes until you see bubbles forming on the surface and they are golden, flip and cook for a further 2 minutes.

Step 4

Once cooked transfer to a kitchen paper lined plate to drain off any excess oil. Keep warm in a low oven while cooking the remaining fritters.

Step 5

Serve with tomato chutney, a sprinkle of coriander, avocado and more Beanz if desired.
