Glazed Meatballs with Sticky Sweet Chilli Sauce

Ingredients
400 g
lean pork mince
50 g
fresh breadcrumbs
2 tsp
soy sauce
2 tbsp
chopped coriander
1
stem of lemon grass, finally chopped
2 tsp
sunflower oil
4 tbsp
Heinz Sweet Chilli Sauce
2
spring onions, finally sliced

tender stem broccoli
100 g
baby corn

sesame seeds to garnish
Instructions
Step 1
Pre heat your oven to 190c fan and line a large baking tray with foil.
Step 2
Add the pork mince, breadcrumbs, coriander and soy sauce to a mixing bowl and combine the ingredients. Using damp hands, roll into 16-20 walnut sized balls, transferring to the baking tray as you go. Drizzle with the oil and bake in the oven for 20 minutes until cooked through and just starting to brown.
Step 3
While the meatballs cook, bring a pan of water to a boil and blanch the broccoli and baby corn for 2 minutes. Drain and refresh under cold water, set aside.
Step 4
Heat a large frying pan or wok over a medium heat. Add the remaining oil, stir fry the spring onions, add the meatballs and cook for a further 2 minutes. Pour in the Sweet Chilli Sauce and soy, toss everything together and when the sauce starts to bubble and thicken add the veg, cook for a further minute. Serve with steamed rice or noodles.
