These banana muffins are quick and easy to make and are sure to be a hit with both kids and adults alike


Ingredients

    Very ripe bananas, mashed

    Caster sugar

    Heinz [SERIOUSLY] GOOD mayonnaise

    Large free-range egg

  • 1

    Vanilla extract

    Self-raising flour

    Bicarbonate of soda

    Dried banana chips to decorate


Instructions

  1. Step 1

    Place 12 paper baking cases in a muffin tin and preheat the oven to 190°C/170°C fan.

  2. Step 2

    Mix the mashed banana with sugar, mayonnaise, vanilla and eggs and beat into a smooth mixture. Gently fold in the flour, bicarbonate of soda and baking powder to form a thick batter. Divide the mixture between the cases, topping each with a banana chip.

  3. Step 3

    Bake in the centre of the oven for 20-25 minutes, until a skewer inserted in the centre comes out clean.

  4. Step 4

    Transfer to a baking rack to cool before serving.
