Grilled Flatbread and Chicken Gyros

For the Bread:

2 1/2  cups

All purpose flour

1 tbsp

Salt

2 tbsp

Mayoracha

1 1/2  cups

Milk

 

Marinade for chicken:

1/2  cups

Mayoracha

1/2 cups

Aioli

1 

Lemon zest and juice

1 tsp

Cajun spice

1 

pinch of salt

1/4 cups

Olive oil

 

Cucumber and tomato salad:

2 qts

Tomatoes cut into cubes

2 qts

Lebanese cucumbers, sliced

1/4 cups

Feta cheese

2 ml

Olive oil

Instructions

Step 1

For the bread: Mix everything in a mixer for about 6-7 minutes, cover with a damp cloth and let stand for 30 minutes. Cut the dough into 8 balls and flatten with a rolling pin on a floured work surface.

Step 2

Marinade for chicken: Mix 3/4 of the marinade with 1 kg of boneless chicken thighs and leave to marinate for at least 20 minutes. On a hot BBQ, grill the chicken for about 8-10 minutes and brush it with the remaining marinade. On the other side of the BBQ, cook the bread 2-3 min each side.

Step 3

Cucumber and tomato salad: Assemble the gyros with mayoracha, chicken and salad.
