Green Goddess Cabbage Salad with Tortillas

Ingredients

1/2 

small sweetheart cabbage, finely diced

1/4 

cucumber, finely diced

4 

spring onions, sliced

1 1/2 tbsp

chives, snipped

juice of one lemon

3 tbsp

Heinz Garlic Sauce

1 tbsp

rice vinegar

1 clove

garlic, peeled and crushed

1/2  

small shallot

fresh basil

50 g

spinach

anchovy fillets

unsalted cashew nuts

tortilla chips to serve

Instructions

Step 1

Combine chopped cabbage, cucumber, spring onions and chives in a mixing bowl.

Step 2

Add the rest of the ingredients to a jug. Use a stick blender to blend into a smooth dressing, adding 1-2 tbsp of water to help loosen the mixture.

Step 3

Pour the dressing over the chopped cabbage mix, stir to thoroughly coat, taste for seasoning and serve in a bowl alongside some tortilla chips. Will keep in the fridge for up to 24h.
