Creamy Mushroom Stuffed Jacket Potatoes

Ingredients

    baking potatoes

    olive oil

  • 300

    g

    chestnut mushrooms

  • 2

    tbsp

    Heinz Truffle Mayonnaise

  • 1

    tbsp

    snipped chives


Instructions

  1. Step 1

    Heat the oven to 180C fan.

  2. Step 2

    Prick the potatoes all over with a fork and rub with half the olive oil. Bake the potatoes for 1 hr 20 minutes or until cooked through and the skins have crisped up.

  3. Step 3

    Warm the remaining oil in a frying pan add the sliced mushrooms, fry for 5 minutes or until just starting to brown, allow to cool for 5 minutes before stirring through the Heinz Truffle Mayonnaise.

  4. Step 4

    Use a sharp knife to split the potatoes.

  5. Step 5

    Fluff the middle of each jacket up a little using a fork. Divide the mushroom mixture between the jackets topping with a sprinkle of chives to serve.
