Instructions
Step 1
Heat a skillet or pan with a little oil and preheat the oven to 180 degrees. Cook the chicken breast on each side for around 5 minutes. Transfer the chicken to the oven and roast for 15-20minutes until it is cooked through.
Step 2
To make the ramen broth heat the cream of chicken soup and miso broth over a medium heat in a large pot. Chop the spring onions and add to the pot along with a little chilli powder. Simmer for 5 minutes and then add the mushrooms and pak choi for a further 10 minutes.
Step 3
Cook the ramen noodles in boiling water. Slice the chicken into thin pieces and set aside. Then assemble the ramen by dividing the noodles into large bowls and adding the ramen broth and sliced chicken. Serve with a boiled egg if desired.
